Hello,
Every stsadm command I launch starts with a big delay (around 2 hours), even
if I mention the -immediate option. I tied also to give a starting time by
using -time option, but this is not taken into account...
Is there something to do with sptimer ?

I have heard of this before, but never personally worked on this issue.
Is the Timer job getting created? Do you have a large farm? Have you
tried IISRESET on the front end servers to see if that makes a
difference?

Run stsadm.exe -o execadmsvcjobs , it will flush the timer jobs.

Check that the Sharepoint timer service is actually running on all machines in the farm; we have had cases where stopped. If it is running on all machines, and still stuck, check the list over timer jobs in central admin. There should be one for your deployment operation; remove it and line to deploy it?
